The beginning of May feels like the start of summer to me. It also begins with one of my favorite holidays – Cinco de Mayo! To celebrate this festive and fun holiday, my hubby and I planned a date night in. After our baby boy went to bed for the night, we prepared this amazing margarita on the rocks recipe and grilled some chicken for fajitas.

This was a fun post to create because it was the first one that my husband helped me prepare and write for the blog! Admittedly, he’s the mixologist of the two of us, so it was a natural fit to ask for his help. He also makes a mean margarita and is my true partner in crime for crushing a bag of tortilla chips with a big bowl of guacamole. (No shame in our Mexican food game!)

He was more than happy to help me create a post around our margarita experiment. I can’t wait for him to share a bit more around here as the blog continues to grow!

A Simple Margarita On the Rocks

What makes this classic margarita recipe so great? Well, it couldn’t be easier to make. You only need 4 simple ingredients, and you can personalize each one. Want fresh lime juice? No problem! Would you rather cut out a step and buy pre-made simple syrup? That works too! (We used a recipe similar to this one to quickly create our own batch.)

What You’ll Need (Per Drink)

  • 3 ounces of good tequila (brand of choice)
  • 1 1/2 ounces simple syrup – homemade or storebought
  • 1 1/2 ounces lime juice (fresh really makes a difference!)
  • 1/4 cup club soda to top off each glass
  • Salt, sugar, and extra lime slices for garnish

Admittedly, I’m not a huge cocktail gal, but I always love pairing a drink with a tasty meal. This simple margarita on the rocks is the perfect drink for a fun night of grilling fajitas for Cinco de Mayo or any other backyard summer feast.

I’m also all about a little extra fizz. That’s why I love the addition of the club soda to top off each margarita in this recipe. It gives it a different, sparkling twist that I think you’ll love.

The Perfect Date Night In

For our date night in, we whipped up some fresh pico de gallo, guacamole, and salsa verde. There’s just something about tacos or fajitas with all the fixings that spell summertime to me. Please tell me that we’re not the only ones who could eat tacos for dinner every single night without getting tired of them!

If you really want to take your margarita game to the next level, you can have a few helpful items on hand to make the process easier. After we were done squeezing (what felt like a hundred) limes by hand, we swore that we’d invest in a good citrus squeezer! You’ll definitely want one if you’re making margs for a crowd. We also love our glass cocktail shaker that makes it easy to create super icy drinks.

  • 3 ounces tequila
  • 1.5 ounces simple syrup
  • 1.5 ounces lime juice fresh squeezed
  • 1/4 cup club soda top off


  • Combine tequila, simple syrup, lime juice, and ice into a cocktail shaker.
  • Shake all ingredients until cold.
  • Pour into a glass over ice.
  • Fill to top of the glass with club soda.
  • Add fresh lime slices and salt or sugar for garnish.
